I improvised this semolina pudding with cherries on a cold winter day. It is a warm dessert, perfect for cold days but it is very tasty the next day, after it cools down. I assure you it doesn't last too long! Mine were conquered by this combination and devoured almost the entire tray. I barely managed to save 2 pieces to photograph them (the next day).

I prepared this semolina pudding based on the soufflé technique: mixing the yolks with a sauce (this time it was a semolina with milk) and incorporating the beaten egg whites. They are the ones who aerate this pudding.

I used cherries because I had them on hand in the freezer. Fruits can also be fresh (in season): cherries, cherries, plums, apricots, pears, fresh oranges, frozen or compote. I think a very good semolina pudding with pineapple comes out of the compote.

For this semolina pudding I used a heat-resistant shape of 20 x 30 cm and 6 cm high. I recommend deep dishes because the pudding will grow when baked and may overflow (as I suffered).

  • 200 g yogurt or sour cream
  • 200 g sugar

  • vanilla, lemon peel, candied fruit as desired
  • 50 g butter for greased form and put on top

Countertop ingredients:

  • 5 eggs, 250 gr grade flour
  • 150 g sugar, 1 teaspoon baking powder
  • 2 tablespoons water

Ingredients for the cheese filling:

  • 1 kg cream cheese, 3 eggs
  • 1 sachet of vanilla pudding, 200 gr sugar
  • 2 tablespoons semolina, 70 gr butter
  • 3-4 tablespoons of milk

Ingredients for pudding cream:

  • 2 sachets of vanilla pudding
  • 600 ml milk, 3 tablespoons cocoa
  • 100 gr sugar, 250 gr butter

Ingredients for whipped cream:

  • 2 sachets of whipped cream
  • 300 ml cold milk
  • 1 tablespoon vanilla sugar
  • 3 teaspoons jelly

Method of preparation:

First we prepare the dough. We break the eggs and separate the egg whites from the yolks. Using the mixer, beat the egg whites until you get a firm foam. Gradually add the sugar and continue to stir until it dissolves in the foam.

Then add the yolks, one by one and the 2 tablespoons of water. Finally, add sifted flour with baking powder and mix with a spatula or spoon.

Spread the dough in a large tray, lined with baking paper, and bake for about 30 minutes at a temperature of 180 degrees. After the countertop is baked, let it cool. Then cut the cold countertop in half. Grease one of the two countertops with your favorite jam.

We prepare the cheese filling. Beat eggs, add sugar and mix. Then add butter, cream cheese, semolina, pudding powder and milk.

We put the cheese composite in the tray in which we baked the top and bake it for about 60 minutes at a temperature of 180 degrees. Then take it out of the oven and put it on a wooden chopper. Let it cool.

We prepare pudding. Put in a saucepan, 500 ml of milk. In the remaining milk add the pudding powder, sugar and cocoa. Mix well, then pour the pudding into the milk from the pan. Stir continuously until the pudding thickens.

We take the pudding from the fire and let it cool. Beat the butter with the mixer until it becomes fluffy. Then add the cold pudding in butter and mix well to obtain a smooth cream. Divide the cream obtained in half.

Spread half of the pudding cream over the greased top and place the cold cheese filling on top. Then add the remaining pudding cream and prepare the whipped cream.

Dissolve the gelatin in a little hot water, then let it cool. Pour the whipped cream powder into the milk and mix with the mixer until you get a firm whipped cream. Add vanilla sugar and gelatin.

Put the whipped cream over the pudding cream and spread it nicely. Cover with the second countertop. Melt the chocolate in a bain-marie or in the microwave. Pour the icing obtained over the cake. Leave the cake in the fridge for a few hours before cutting and serving. Good appetite and increase cooking!
