My muffins today are more dietary, so to speak, because I didn't put sugar in them. I found at Selgros one of the best districts with products for different diets and I stocked up on everything, including sugar-free jam.

Ingredients Muffins with ricotta and jam
- 3 eggs
- 150 g melted and cooled butter
- 250 g ricotta cheese
- 100 g crystal sweetener
- 190 g flour
- ½ teaspoon baking powder
- 1 teaspoon vanilla extract (essence)
- 1 teaspoon lemon peel
- Jam (of any kind)
Preparation Muffins with ricotta and jam
Turn the oven to 180 degrees and prepare a muffin tray. Put special paper forms for muffins in the tray.
Break the eggs into a large bowl and add the sugar. Mix until the composition lightens in color and increases in volume.
Add butter and vanilla extract. Stir and add the ricotta cheese. Homogenize.
Mix the flour with the baking powder and add to the dough. Mix.
Fill ¾ from each piece of paper and place a teaspoon of jam on top of each muffin.
Put the tray in the oven for 20 minutes (or until it passes the toothpick test).
Once cooked, remove the muffins on a wire rack and let them cool completely.

To prepare the icing, mix 125 g of powdered sugar with lemon peel and juice. Pour over 2/3 of the icing over the hot muffins.

Mix the flour with the sugar, baking powder, poppy seeds and grated lemon peel. Separately, mix the oil with the yogurt, lemon juice and eggs.
Put the liquid mixture over the dry one, mix it, add the honey, put it in the baking tins and leave it in the oven for 20 minutes, until it browns.
Meanwhile, prepare the icing by vigorously mixing the sugar with the egg whites and lemon juice.

I use this type of cheese in desserts, but also in savory recipes (pasta, spinach pancakes, appetizer cake). It must be drained if it has a lot of whey, otherwise it can influence the texture of the cake.

After this time I let the cake cool in the pan for the first 15 minutes, then I took it out and left it on a grill.
For decoration you can prepare royal icing (mix the egg white with sugar and lemon juice) or simply powder with sugar. I preferred the white glaze with sugar and lemon juice, over which I sprinkled sugar decoration and I also used some mint leaves for more color.

The seeds can be used whole or ground as an ingredient in many dishes, especially in pastries and bread. From what I have seen and as mentioned above, poppy seeds are used more often in savory dishes than in sweet ones, although they are super delicious in any of these combinations.
Besides the fact that they have a wonderful aroma, poppy seeds bring with them certain nutritional benefits. Opium poppy has been used as a remedy for insomnia for centuries, and the seeds are known for their calming effects. Today, many anxiolytic supplements contain poppy seeds. It is also believed that poppy seeds help improve female fertility and digestion, as they are very good sources of insoluble fiber.
Poppy seeds are rich in calcium and copper, two nutrients that help bone health and strength. They are also rich in manganese, which helps in the production of collagen which, in turn, protects the bones against damage. Another thing I really like about these muffins is the way they look. The poppy muffins have a beautiful gold and they are just perfect for a picnic on a sunny day, or for a summer day in general, while the poppy seeds give them a beautiful and delicate & ldquomodel & rdquo, similar to some polka dots.
