Which is why every year, during this period, I prepare this syrup.

RECIPE PREPARATION Acacia flower syrup:

Pick acacia flowers in the morning, preferably in an area away from any source of pollution.

Pass the flowers under a stream of cold water and detach the flowers from the stems, then boil them in water.

Let them simmer for 90 minutes, stirring occasionally.

Strain the resulting syrup, add the sugar and boil until it binds (about 90 minutes). Add the lemon juice and let it boil for another 5 minutes.

Pour the syrup thus obtained into clean and dry bottles and leave it to dry (between beds) for 24 hours.

Label and place it nicely in the pantry.

First of all, the acacia flowers will wash very well. Poor washing is required to remove insects and dust. Drain the flowers. In the meantime, s3 break the stems of each flower.
