It is a good bread only when you do not have yeast, its original English name being: Irish Soda Bread.

RECIPE PREPARATION Irish bread:

Preheat the oven to 200 degrees C. We need a pan with a lid that can be put in the oven and be large enough to allow our bread to grow. Put the pan empty in the oven to heat. Sift the flour, salt and baking soda into a bowl.

Mix well, then add the yogurt and mix well with a wooden spoon. After mixing the ingredients, transfer the dough to a plate and knead well. We make a cross of the dough in the middle with a knife. Remove the tray from the oven (be careful that it is hot) and put the dough (don't forget to put the lid on). Bake for 45 minutes at 200 degrees C. After 45 minutes, remove the lid and leave it in the oven for another 15 minutes to brown.

Ingredient:

  • 5 g of dry yeast
  • 500 g of gluten-free flour
  • 60 ml of olive oil
  • 2.5 g sugar
  • 5 g salt
  • 500 ml of warm water.

Method of preparation:

The sifted bread is added to a bowl with salt and sugar. In the middle of the mixture, make a hole and pour the water, yeast and olive oil. Mix well with a whisk until the dough becomes sticky and soft. Place the bowl in the refrigerator and let it rise overnight. Put the dough on a baking sheet with flour and place everything in a tray. The dough should be shaped to the shape of a tray. Cover the tray with a lid and leave everything at a temperature of 180 ° for 30 minutes. Then remove the lid and bake the bread until browned.

The preparation is extremely simple, simply mix all the ingredients. It is a recipe that can be made by practically anyone who considers themselves anti-talent in the kitchen.

  • 200 g white wheat flour
  • 100 g whole wheat flour or rye flour (if you don't have one, use only white flour)
  • 250 ml milk (water, missing or if you prefer simplicity)
  • 250 g natural yogurt (fatter or less fatty, does not affect baking, but is mandatory)
  • one teaspoon grated baking soda (5 g)
  • a teaspoon of grated salt (7-8 g)
  • 0 teaspoon grated sugar
  • Optional sesame seeds, in, pumpkin, sunflower, chia, poppy, hemp or chopped walnuts

In a bowl combine all the solid ingredients, ie flour and baking soda, possibly the seeds, if we use, and separately dissolve the salt and sugar in milk (water), add the yogurt and mix.

When the liquid part of the composition is well mixed, we add it over the flour with everything we put over it, ie over the dry component.

Mix quickly with a spoon, because the chemical reaction between bicarbonate and lactic acid is immediate. The reaction results in, among other things, carbon dioxide, which practically makes the product from baking aerated and not compact. By mixing excessively, we risk eliminating carbon dioxide. The same effect, but through a different and much longer process, is given by brewer's yeast.

We pour the obtained composition in a tray lined with baking paper and bake it at about 180 degrees for about 25-30 minutes, depending on the oven. The last 10 minutes we can reduce the temperature, this way it bakes well inside, but does not burn outside. Leave to cool on a grill for a few minutes and it's ready.

The great advantage of this technique is that it gives the possibility to use gluten-free flour, of any kind and in any combination, and that it can be declined in many variants, saltier, sweeter, more aromatic, depending on what we add.
A brilliant idea are walnuts, added together with a little sugar or honey, the result is an extraordinary breakfast bread. The same goes if we add raisins or prunes cut into small pieces. The combinations are endless. My favorites are either the combination of dried apples with walnuts, or pistachios chopped with hot paprika.


Irish bread with baking soda

In a bowl, mix the flour, baking powder, salt, baking soda and sugar. Homogenize, then add the other ingredients (drinking yogurt, egg, butter, raisins).

Mix with the spirals from the mixer until a homogeneous dough is formed.

Use the flour for the board.

The dough obtained is placed in a cake form lined with baking paper. Bake according to the instructions below.
Bake the bread at 200 ͦ C for 15 minutes, then reduce the temperature to 180 ͦ C and bake for another 30 minutes.

    Mix eggs with salt and sugar for 2-3 minutes. Add oil, yogurt. Separately mix the flour with the baking powder, make a hole in the flour and add the egg and yoghurt mixture, mixing with the mixer until the dough becomes homogeneous, almost like a cake, but with a higher density. Put the mixture in a cake pan, lined with baking paper and put in the oven for 30-40 minutes, until it has a golden crust. Remove from the oven and cover with a clean kitchen towel and allow to rest for at least 30 minutes. Good appetite!


    Beef and sauerkraut

    5 kilograms of beef shell
    6 peppercorns or pickled spices packed
    3 carrots, peeled and cut
    3 onions, peeled and cut
