Whisk the egg whites with the sugar and a pinch of salt. Mix the yolks with the oil and add over the egg whites. Add flour, baking powder, vanilla sugar. The composition is divided into 2. In one put cocoa, the other is left simple.

Here are the ingredients you need for the cherry cake:

- 600 g sweet cheese
- 2 eggs
- 100 g brown sugar
- 120 g flour + 2 tablespoons of flour

- 1 teaspoon of lemon juice
- a little baking soda (a knife tip)
- 350 g pitted cherries
- Cinnamon.

For decoration:

- 300 g cherries
- 2-3 tablespoons of sugar

- cardamom.

Method of preparation:

1. Mix the sweet cheese with the eggs and sugar until a fine cream is formed.

2. Add 120 g of flour, semolina, vanilla, lemon peel and mix again until a homogeneous cream results.

3. Add baking soda and lemon juice and mix the composition.

4. Sprinkle the cherries with cinnamon and the two tablespoons of flour, so that they have a coating of it (in this way, do not color the whole dough).

5. Add the cherries to the dough and mix gently.

6. Distribute the composition in two cake trays, which are placed in the preheated oven at 180 degrees and leave until the cakes are lightly browned.

7. For decoration, caramelize the cherries with the two tablespoons of sugar, leaving them on the fire, in a pan, until the juice left by them decreases.

8. The caramelized cherries are distributed on the two cooled cakes, and cinnamon and cardamom are sprinkled over them.

1. Until we prepare the composition, turn on the oven and preheat it to 160 degrees.

2. In a large bowl, break the three eggs, add the sugar and mix well until it becomes a fine cream and increases in volume. Then add half a cup of oil, half a cup of milk and vanilla essence.

3. Incorporate the flour with the baking powder and mix continuously until we no longer have lumps.

4.We prepare the cherries. I used cherry compote. We take out the seeds and cut the cherries in half.

5. Wallpaper a baking sheet with paper, then pour the composition into it.

6. Spread the cherries over the composition and we can press them a little in the dough. Not much because they will go to the bottom.

7. Put the tray in the oven at 160 degrees, for 35-40 minutes or until it passes the toothpick test.

8. When the cake is baked, remove it, leave it to cool and then powder it with sugar according to your preferences.

10. The cake with cherries and chocolate allow to cool completely then portion for serving.
